SMOKEYS - THE ART OF BARBECUE
Smoked meat is a method of preparing red meat (and fish)
which originates in prehistory. Its purpose is to preserve these protein-rich
foods, which would otherwise spoil quickly, for long periods. There are two
mechanisms for this preservation: dehydration and the antibacterial properties
of phenols and other chemicals in the absorbed smoke. In modern days, the
enhanced flavor of smoked foods makes them a delicacy in many cultures.
We experienced this in its best form at Smokeys, Khan Market, New Delhi.
Shivkaran Singh , the mastermind behind this Mr.Shivkaran Singh has always
worked wonders in his restaurants. The techniques and the expertise he has put
in his offerings really shows.
This new outlet in the most bustling area of Khan Market has opened around 8-10
days back. Done beautifully in hues of orange and black with ample natural
light and murals and quotes on the walls makes it really sophisticated. The bar
on the 2nd floor is stocked up nicely with very talented bar men. It also
boasts of a small balcony which will be more worthwhile in cooler months.
We started with their signature cocktails like Lock stock and smoking barrel
and Mimosa mimic which were utterly different and very well made. But my
favorite turned out to be the Melon sangria and the New old fashioned. I
usually don't prefer whiskies in my Cocktails but I loved the new old fashioned
here as it was just too good and I could not taste too much of whisky flavor in
my mouth.
Accompanied with one of the best Tossed sausages dish and the Atomic ( a spicy
version of the sauce) chicken wings. I ordered a Chicken caesar salad again as
always which was good. One of us ordered the Lamb kibbeh a traditional mid
eastern kebab which came out to be really awesome. Soft with good flavors of
sumac and crunch of pine nuts.
I was totally boggled when I tried the Pork ribs....The best of the lot with
house made condiments and marinade.Totally succulent and fall of the bone
texture. The Burger is very popular on their menu. And yes I realized why it was so
popular, when I dug into the lamb burger myself. Best burger I have had till
date. The sweetness of the onion relish and juiciness of the meat with so many
flavors and textures just bursting into my mouth. I could not have enough of
it, so definitely going again soon to have it again. We also liked the Hotdogs
sliders especially the Andhra style tenderloin and the bacon wrap sausage.
They have some interesting desserts too. Like the Banoffee pie and with nice crust at the bottom and the choco lava cake witrh ice cream which was also fine.
Overall a nice chic place for a quick bite or a relaxed evening with a special
cocktail and a smoked meat creation.
